This is a Japanese sweet of the shop, Hitotsubatago(ひとつばたご) at Gifu(岐阜) prefecture, called Shibaguri(柴栗). The center filling is mashed chestnuts, rolled up by sweet bean paste. The filling and the bean paste are as if they were quiet, self-effacing persons. They aren't so sweet as cakes that some might think the taste isn't enough. Before thinking like that, please listen to their quiet voices... In fact, their fine tastes of the materials are drawn out so much, without any additives. The one's "modest"sweetness brings out the flavor of the other. The total balance of the two gets into a harmony.
